St. Bon’s Cafe

As a result of being diagnosed with Celiac Disease in 2010, owner Kurt Fulwider decided to open a 100% gluten-free restaurant in Highlands Ranch, Colorado. Fulwider noticed a shortage of fresh gluten-free bakery items in the Denver Metro Area and thus his need turned vision turned into a successful business.

Wellogy came on board to create the design and execute the Construction Documents. This project consisted of renovating what used to be a Quiznos Restaurant into a fresh, modern, and bright space that would house a large dining area, an open kitchen for baking, a back of the house area for preparation and coolers, and public restrooms.

St. Bon’s is named in honor of St. Bonaventure, the patron saint of stomach disorders. St. Bonaventure became the inspiration for opening this restaurant to serve those who suffer from stomach ailments, and it also contributed greatly to the religious design theme of the bakery. Kurt added his own personal touches to the space with an altar serving as the central community table in the space, a church organ, reclaimed stained glass church windows hanging in the storefront, and a church pew that functions as a banquette. The final outcome included a functional kitchen layout, new casework for both storage and a service counter for customers, a reconfigured order counter, green accent colors found in the company’s logo, and modern
